| Preperation and Usage: | For lamb kofta kebabs mix minced lamb with cumin, coriander, chilli and Cinnamon. Form onto kebab sticks, grill and serve in a pitta bread with lettuce, cucumber, sour cream and fresh coriander.
Cook Cinnamon with fresh blackberries, sugar, red wine vinegar, nutmeg and allspice and use as a delicious fruity sauce for lamb, venison or duck.
For a refreshing apple ice cream add a pinch of cinnamon to cooked apples along with evaporated milk and low fat natural yoghurt. Freeze for 3 hours and serve with fresh apple slices and oatcakes.
